Named for the birthplace of rum, this cocktail brings together the simplicity of an old fashioned with the spice and smoke reminiscent of pirate ships and battles on the high seas.
- 1 ounce Kraken Spiced Rum
- 1 ounce Ron Zacapa 23 Rum
- 1/4 ounce Grand Marnier
- 3 dashes Scrappy's cardamom bitters
- 3 dashes orange bitters
- 1/4 ounce rich demerera syrup
Stir over ice until chilled. Pour into a decanter. Using a culinary smoking gun fill decanter with cinnamon smoke. Put in the stopper and swirl for 20 seconds to infuse cocktail with smoke. Pour over a large ice sphere and enjoy.
You can get a culinary smoking gun at finer cooking stores or on Amazon. Batteries run a small fan that pulls the smoke through a hose. They will burn any combustible material from wood chips to tobacco. My current favorite is to run cinnamon sticks through a coffee grinder to create a rough "sawdust" like material that I can burn.
